JT is serving up a recipe that’s shore to impress and will have you “steaking” your claim on dinnertime greatness. Get your surfboards and steak knives ready—this Surf & Turf with Creamy Peppercorn Sauce is a total catch!
Lobster Boiling Instructions:
1️⃣ Fill a large lobster pot with water—use three quarts per 1.5 lbs of lobsters. Make sure they’re totally submerged!
2️⃣ Add 1/4 cup sea salt for each gallon of water. (1 gallon = 4 quarts)
3️⃣Bring the salted water to a rolling boil.
4️⃣Carefully add live lobsters one at a time (use gloves or tongs). Do not cover.
5️⃣Stir the lobsters halfway through boiling.
6️⃣Lobsters are ready when their shells turn bright red. After cooking, place lobsters in cool water or let them stand for 3-5 minutes before serving.
Pan-Seared Steak with Garlic Butter:
• 2 lbs New York Strip, Ribeye, or Top Sirloin Steaks (1 to 1.25” thick)
• 1/2 Tbsp vegetable oil (or other high-heat oil)
• 1 1/2 tsp sea salt
• 1 tsp freshly ground black pepper
• 2 Tbsp unsalted butter
• 2 cloves garlic, peeled & quartered
• 1 sprig fresh rosemary
1️⃣ Pat steaks thoroughly dry with paper towels.
2️⃣ Just before cooking, generously season with salt and pepper.
3️⃣ Heat a cast iron pan until hot. Add oil over medium-high heat and swirl to coat.
4️⃣ Add steaks and sear 4 minutes per side for a nice brown crust. Use tongs to sear edges for 1 minute each.
5️⃣ Reduce heat to medium. Immediately add butter, garlic, and rosemary. Spoon butter sauce over steaks for another minute.
6️⃣ Remove steak, tent loosely, and rest 10 minutes before slicing into 1/2" strips. Spoon over extra butter sauce!
Creamy Peppercorn Sauce:
• 2 Tbsp salted butter
• 1 clove garlic, minced
• 1 Tbsp peppercorns, crushed
• 1/2 cup whiskey, cognac, or brandy
• 1 cup low-sodium beef broth
• 1 cup heavy whipping cream
1️⃣ Melt butter in a skillet, sauté garlic until fragrant (don’t brown it).
2️⃣ Add crushed peppercorns and stir until aromatic.
3️⃣ Pour in whiskey/cognac/brandy; reduce by half or more, about 2-3 mins.
4️⃣ Add beef broth, bring back to a simmer and reduce by half.
5️⃣ Add heavy cream and simmer 10-15 mins, stirring occasionally, until slightly thickened.
6️⃣ Season to taste with salt and pepper!
