A full restaurant on a Friday night feels like a good month. Sometimes it is not.

The number that tells the truth is your prime cost, food plus labour together. For most South African restaurants it should sit around 55% to 65% of sales. A few percent over, week after week, is how a busy kitchen still ends the month with nothing in the bank.

The hard part is that almost no one tracks it weekly. So the bleed stays invisible until it is the whole problem.

Waiting to hear from SARS this week? You can stop guessing.

Quick way to know where you stand:
1. Wait for your SMS or email between 1 and 12 July.
2. Or check the SARS Online Query System and look for "My Auto Assessment Status."
3. No word by 12 July means you are not auto assessed, and you file from 13 July.

New this year: your assessment can come through on WhatsApp, eFiling has a fresh look, and there is a medical aid dropdown to cut errors.

A little preparation now is a calmer July. Save this so you have the steps when you need them.

The SARS messages have landed.

From 1 to 12 July, SARS sends out around 6 million auto assessments by SMS and email. If one arrives, take a breath. You do not need to rush to a branch.

But please do not just tap accept. An auto assessment only knows what SARS can see. Your medical aid, your retirement annuity, a home office, a bit of side income. If it is missing, your refund could be smaller than it should be, or a quiet problem could be waiting for later.

Review first. Accept second.

If you were auto assessed, you have until 23rd October to review and correct your returns.

Filing season is officially open from today.

If you did not get an auto assessment, this is your window. Non provisional taxpayers have until 23 October to file.

Make it painless by getting these together now:
• Your IRP5
• Medical aid tax certificate
• Retirement annuity certificate
• Investment income (IT3b)
• Travel logbook, if you claim travel
• Home office records, if you work from home
• Section 18A certificates for any donations

Auto-assessments are handy, but they only know what SARS already has on file, not your deductions, home-office costs or business expenses. Accept too quickly and you could overpay (or hit trouble down the line).
